Setting non-primary e-mail account as default 'from' account

I have successfully switched to an IMAP server as my primary server. Now I would like to use my old e-mail address as my 'from' address when I create a new e-mail. It is easy to do on my MacBook Pro, however on the iPad, I cannot find a setting for this. Any ideas??

You can set the default account in Settings, "Mail, Contacts, Calendars", Default Account. But that only works for new mail created on your iPad.

If your default account is XYZ@mail.com, and you're replying to an email you received at your other address, 123@mail.com, then the reply will be from 123. You can change it, but just clicking on the "From" address. But you can't make it permanent, unfortunately.
