After sync, having downloaded 5 tv episodes and 2 movies, Video application shows no videos to play. I had no sync errors, and free space in the iPad decreased as files were transfered. iPad shows 5gb of video content, how do I play it?

By the way, I have a iMac, and I can watch the videos and movies on the Mac, and I had previously watched many movies and tv shows on the iPad, downloaded directly to the iPad from the iTunes store. This is the first time I have tried to transfer video from the Mac to the iPad (via iTunes).
What version of iTunes do you have? (make sure that you have the latest version)
Are you fairly familiar with using iTunes to sync to an iPod/iPad from a PC/Mac? Have you checked the basic things like making sure that the videos are selected to be synced?
By default, when you connect a new device to iTunes, nothing will sync. After connecting your iPad, you have to enable syncing of each media type (music, podcasts, videos, photos etc) and the select each file before you sync. Perhaps have a look at some iTunes tutorials if you are not familiar with the process.
(I apologise if you are already familiar with this but I just wanted to start with the easiest fix first)
I have iTunes 9.2. I have used iTunes since it first came out, syncing various macs, an Apple TV, ipods and iphones. Have had trouble on several occasions due to bugs in iTunes, but over time they have been solved.
The iPad info (in settings) indicates it has 0 videos, even though I see videos being transfered to the iPad during sync, and the space available gets smaller while the size of space allocated to videos grows.
Have you checked the media type of the files in iTunes? I had a problem (following an iTunes upgrade a few months ago) where some movies and video podcasts changed their "media type" to music. See if your movies appear in your iPod app as some other media type.
I fixed this by deleting the files from iTunes, keeping the file (ie do not move to recycle bin), then re-import the file to iTunes.
