iTunes Freezes and Becomes Greyed Out During Sync

I was syncing the iPad and hoping to also sync around 200 photos, along with everything else. In the middle of the backup, iTunes froze and became greyed out. None of the buttons worked. The iPad still said "sync in progress." After about 20 minutes it restarted the backup and everything was fine.

My question is this: In the event that it hadn't magically (so to speak)fixed itself, what should I have done? I know you are not supposed to disconnect it while it is supposedly syncing, but what else can be done?
I just want to know in case it happens the next time I sync. (Crying didn't seem to help...)

200 photo's shouldn't take that long unless they are high-res. I often lose the ability to navigate within itunes when syncing.

A few times mine has frozen, I let it set for a while to see if it would free up, and when it did not, I had to force-quit itunes. After that, I rebooted (Windoze) and re-sync'ed. Luckily, it all worked.

During the sync, I noticed that the CPU usage was 99%. I checked the Task Manager to see what was using so much CPU, and it was the iPad photo optimization program. It froze iTunes, so that nothing worked--I could not even minimize the window.
What would happen if I just disconnected my iPad during the sync, if it happens again and doesn't resolve itself?
