I want to do an iOS restore, and then set it up as a new device. Would I lose the 3G data plan that I paid for already? Please advise.

No. Restoring your iPad does not do anything with the sim which your data plan is tied to.

You're restoring the iPad, not the sim card. The data plan follows the sim card so you will still have your data plan.

Yup I've replaced my iPad a couple of times, just keep your sim. You can even replace sim if it's lost and keep unlimited , just know the phone number your iPad 3G account is associated with...

In other words, if your forced to replace the sim card even then you can keep your unlimited . I believe only circumstances to lose it include changing plan and billing issues.
